From a college romance to husband and wife at Springfort Hall Hotel

Chef Rachel Griffin and Electrician Paul Moloney first met when living opposite each other in the same student accommodation in college. “One night myself and a girl I lived with noticed the lads across the way had put their phone numbers up on their window, so we decided to text them and ask them to come over. They did and one of them was Paul. The other lad and my then housemate are actually married now too,” Rachel shares. 

The couple’s relationship continued beyond their college days and Paul popped the question during a night away in Bray. “We were going out to see a band we both really liked and getting ready in the hotel room when Paul asked me would I wear this tonight. I turned around to see he was holding out a box with an engagement ring in it! I wasn’t expecting it at all,” Rachel says. Of course, she said yes and the couple decided on May 4, 2018 as their wedding date as it is the bride’s mother’s birthday. They opted for a ceremony in The Nativity of the Blessed Virgin Mary Church in Doneraile, followed by a reception at the stunning Springfort Hall Country House Hotel, Mallow. 

Memorable moments 

Rachel cherishes the moments she got to spend with her father before the ceremony as he drove her to the church. Paul says he will never forget the couple’s arrival at Springfort Hall, and being greeted by all of their smiling family and friends. Paul also surprised Rachel with the attendance of the couple’s beloved pug Ozzy for the wedding photographs. “I was so surprised to see Ozzy after the ceremony but it was great to see him and have him included in the photos from the day,” Rachel recalls. 

 

How was your experience with Springfort Hall Country House Hotel? 

“What can I say about Springfort Hall? They were absolutely amazing. They did everything for us, from helping with planning our day to making sure everything ran smoothly. Nothing was too big of a job for them. They made it feel like the venue was our home for the day. Marcella was all ways there for us on the lead up to the wedding the day itself, and Paul and Liz really went above and beyond to help. The venue itself and function room were both amazing and the food was great. Our guests are still talking about their signature featherblade beef dish. As I am a chef, I wanted the food to be amazing, and Springfort Hall certainly was that. If we had the day to do over, we would pick Springfort Hall again without hesitation, and we can’t wait to go back and visit there again soon.
